Monster Mac & Cheese
This “Monster Mac & Cheese” is loaded with green veggies
My kids love Mac & Cheese (who doesn’t?) So I always like to have veggie sauce on hand for quick lunches. Here is a green pasta sauce that is loaded with veggies. One batch makes plenty to freeze for the next time you are in a bind. I like to freeze mine in large ice trays for single servings.
I also have an orange version made with butternut squash and cauliflower for a more classic mac and cheese look.
Ingredients:
🥣 Servings: ~10
⏳ Prep Time: >5 minutes
🔥 Cook Time: 10 minutes
1 Bag of Spinach
1 Bag of Frozen Peas
1/2 White Onion (Diced)
1 Garlic Clove (Minced)
Olive Oil
1 Cup Ricotta Cheese
1 Cup Bone Broth
Parmesan or Pecorino Cheese
Salt to taste
How to Make:
Add olive oil to a pan and sautee onion until transparent, add the garlic at the very end
Add the bag of spinach to boil until it wilts, stirring frequently (about 3 minutes)
Once wilted, add the frozen peas to the pan and cover. Turn off the heat and steam for 8 minutes
Once cooked, put the veggie mixture, ricotta cheese and bone broth to a blender. (If you are also making the pasta at this time, you could use 1 cup of pasta water in lieu of bone broth)
Once blended serve with pasta or freeze
Add cheese (I like Pecorini for a cheesy punch reminiscent of Mac & Cheese) and Salt to taste
Bonus Tips:
✅ Freeze leftovers in large ice trays for instant, single serve portions next time you are in hurry!
✅ Give it a fun name, like Monster Mac & Cheese, to compensate for the fact that it’s green
✅ Make sure to add lots of cheese when serving so that it tastes like Mac & Cheese
✅ Great to pack in lunches!
